Chocolate Counter Cake...because why not?

It's 9:30 PM on a hot, balmy Tuesday night, so what do I decide to do? Make chocolate cake and heat up our apartment, of course! And was it absolutely worth it? Yes. 

I was sharing with you on my Instagram stories (where the real juicy stuff happens) that I have been spotting for a month straight and got my period what felt like 2 times in a month. My hormones are a mess, and all I want is a heating pad, a minimum of 2 drinks, with the AC on full blast and a face full of chocolate to lull me to sleep.

Everytime I catch myself wishing I were better or my life were better, I am always reminded of why the small joys of life matter most. And tonight? That means I am making counter cake. 

What the hell is counter cake? To me, it's just a regular cake...and on social media, it's a cake you keep on the counter all week so you can tuck away at it whenever you pass by. Same thing, am I right? 

Here is the recipe for Matilda Bruce Bogtrotter level, chocolatey counter cake:

Tools:

☆one big bowl

☆ a whisk (or chopsticks like I used)

☆a 9x13 pan (or smaller cake pans that you can split the batter between, bundt pan or hey cupcake pan whatever!).

☆And ideally parchment paper and oil spray to lift the cake out easier.

First steps:

Preheat to 425°

Line and grease pan.

Brew 3/4 cup-1 cup black coffee.

Take out 2 large eggs from the fridge.

Ingredients:

•1 and half cups flour (I spoon it into the measuring cups and level it out, so it might be less than this)

•3/4 cup white sugar and 1/2 cup brown sugar (but you can also do 1 and half cup white sugar...don't cry to me about the sugar amount..you can use less if you want but why do that yourself?)

•3/4C cocoa powder and a little more

•sorry to say I eyeballed the baking soda and baking powder using a 1 tsp measure...about 1.5 tspish baking soda and 3/4tsp ish baking powder.

•1 tsp salt

》You wanna mix all this together in the bowl first, make sure the baking soda and powder is mixed thoroughly throughout. Sift it if needed.But I didn't, I just made sure to crumble up any hard baking soda or cocoa pieces.

Now you wanna add the wet stuff⬇️

•2 large eggs, the ones we left out

•3/4 milk (i used 2% milk)

•1 tsp vanilla (i used vanilla paste)

》Mix this stuff in together first so eggs don't get cooked by hot coffee

•3/4C coffee ( I use Lavazza, the real good kind and the hot/warm coffee is what blooms the cocoa)

》Whisk well and pour into pan and bake for 30-35 mins. Longer if toothpick doesn't come out mostly dry. 

Topping if you feel fancy:

•semi sweet chocolate chips (I used PC brand this time, usually Callebaut or Ghirardelli)

•1 tsp butter

•A little flakey sea salt

》Melt at 15 sec increments in microwave and stir in between (took me 30s to melt enough for 2 slices)
